In this hot and sultry weather we are always looking to consume cold and refreshing drinks. Iced tea is always a good option over fizzy cold drinks. I very often make freshly brewed iced tea at home. Adding fruity flavors to this iced tea makes it more interesting and healthy. Since the time I have started brewing iced tea at home, I can never have readymade premixed iced tea.
Nowadays I prefer using loose long tea leaves over tea bags. Why tea leaves give better flavor than tea bags? Read this post.Â
Summer is also the season of peaches. I use fresh juicy peaches to flavor my iced tea. Sweet fruity aroma of peaches gives a new dimension to iced tea.
Use fresh peaches in this peach – mint iced tea recipe
I have used peach syrup to infuse peach flavor in the tea. Peach puree can also be used, but in that case the tea becomes muddy. With syrup we acheive clear tea.
List of ingredients is given in the recipe box at the end of this post.
Method to make peach – mint iced tea is pretty simple. Boil water in a pan. Add good quality long tea leaves or tea bags to this water. Add few sprigs of mint leaves as well, and let it steep for about five minutes. If you are using loose tea leaves, strain the mixture. In case of tea bags, simply remove the tea bags. Allow the tea to cool down.
In the meantime prepare peach syrup. Dice two peaches into small pieces. Put them in a heavy bottomed pan. Add sugar according to your taste. Also add half a cup of water, and heat the contents. Keep on stirring and pressing peach pieces so that they are mashed. Switch off the gas once sugar has dissolved. Pass the mixture through a strainer to remove peach pieces. Add this peach syrup to the brewed tea. Add a tablespoon of fresh lemon juice. It enhances the flavor of the tea. Also add two cups of chilled water. Keep the tea in refrigerator to chill.
For serving, first add ice cubes to the glass. Then add some muddled mint leaves and fresh peach slices. Pour the tea in glass. Chilled peach – mint tea is ready.
