The weather has become very hot here. It is necessary to keep ourselves hydrated in this harsh summer. My son gorges on caffeinated cold drinks and syrupy ready-made fruit juices throughout the day. In order to keep hydrated, and at the same time enjoy something satiating as well as healthy, I decided to try different fresh fruit based drinks. I will share them one by one. Today I will share recipe of kiwi cucumber mint mocktail.

I had kiwi fruits and few cucumbers in my refrigerator. So I decided to make a mocktail using these two as main ingredients.They both are awesome in summers. In my previous post I had discussed about the health benefits of Kiwifruit. It is considered as super fruit because of the nourishment it provides. Both kiwi and cucumber have high water content and are rich in vitamin C. For cooling effect I decided to add a large amount of mint leaves. Again, these leaves are my favorites in summer, and I make chutneys, Mojito, salads, mango panna, soups, stuffed pomfret, and many more dishes using this aromatic herb. It is a great appetizer and promotes digestion. For some added flavor I added mix fruit juice to this concoction. Since kiwi has predominantly sour taste, I added some honey for sweetness. Vegans can use either sugar syrup, maple syrup, or any other substitute of their choice. I put everything in a blender along with some crushed ice, and churned it for three to four minutes to get smooth consistency. On tasting, I found the drink still had overpowering sour taste. I decided to add black salt to balance the taste. The transformation was perfect, and now I had a tasty, and well balanced summer cooler. Black salt is good for digestion, and is highly recommended in Ayurveda, the ancient Indian medicine system. It can be obtained from any Asian stores.

Instructions
  1. Put all the ingredients in a blender (save few slices of kiwi, and some mint leaves for decoration), and blend till the mixture attains smooth consistency.
  2. Taste and adjust the quantity of honey and back salt. I have kept the sweetness on the lower side. If you want it to be sweeter, add some more honey.
  3. Strain the liquid using a strainer. Pour in glasses, and decorate using kiwi slice and mint leaves. Serve chilled.
Recipe Notes
  • Prepare and serve fresh mocktail. If you will store it for long, taste will change.
  • I have used mix fruit juice. You can substitute it with apple juice, or any other juice of your choice.
  • If black salt is not available, use common salt in its place.
  • Serve chilled.
