Come summers, and most of us lose appetite for hot beverages such as tea or coffee. Cold drinks and juices are the most sought after.  For variety I make mocktails and fruit punch at home. Since the time I have started writing this blog, I have become much more interested in trying new recipes and have started experimenting with food a lot. After making kiwi cucumber mint  mocktail, I tried kiwi smoothie. It did not come out very well, and so I have not shared that recipe. I have left it to try later, and refine it further. Then I tried this pineapple mocktail. It was delicious, refreshing, and looked beautiful. It has lovely red hue along with orange and yellow. I have decided to name it sunset glory.
Fruit juices and many soft drinks keep us cool and hydrated. They have high nutrition  value, provided they are not artificially flavored, sugar loaded, commercially made cold drinks. Packaged fruit juices are also many times loaded with sugar, and preservatives. Therefore it becomes imperative to buy juices after thoroughly reading the list of contents. I try to use fresh fruit juice as far as possible, but if I buy canned juice, my effort is to buy preservative free juice with no added sugar. For fruit punch I make organic ginger ale at home. In short, though there is added sugar, carbonated soda etc. in these drinks, I do try to make them as healthy as possible.
Finally I feel the catch is to take these drinks in moderation. Try to be active in order to burn those extra calories that are ingested in our body by becoming weak and submitting ourselves to demands of taste buds and gluttony.
Pineapple mocktail is ready to be served
For this pineapple mocktail I have used fresh pineapple juice, though you can use canned juice as well. To that I have added Sprite (cold drink) and rose syrup. Since, both Sprite and rose syrup are sweet, there is no need to add extra sugar.
You can try a fish preparation pomfret hara bhara or pin wheel sandwich to go with this mocktail. You can also try healthy and tasty fruit salad.

Recipe of Sunset Glory: Pineapple Mocktail

- 1 cup pineapple juice
- 2 cups lime lemon soda such as Sprite
- 2 tablespoons rose syrup I used Roohafza
- 1 cup crushed ice
- 2 pineapple wedges for decoration (optional)
- 2 small sprigs mint leaves for decoration (optional)
- Take two tall glasses. In order to get nice color gradient, first put crushed ice in the glasses.
- Pour pineapple juice on ice. Then add Sprite.
- Over this add rose syrup. Being the heaviest it will settle down at the bottom.
- Stir the mixture a little bit so that the contents get slightly mixed, but still they can be seen separately.
- Decorate the glass with pineapple wedges and mint leaves, or with decorative straw of your choice.
- Serve chilled.
