Fruit Trifle Pudding

Puddings are my favorite. Many times if I have to make something quick and nice, I opt for pudding. I can quickly assemble an impressive sweet dish with whatever ingredients are available at home. Trifle pudding is one such dish, which every one loves, and I very often make it with cake or sometimes biscuits, fruit juices, cream or ice cream, fresh or frozen fruits, chocolates, syrups, and all such things that I can lay my hands on. With various permutations and combinations we get very tempting and delicious pudding. Today I will share one such recipe of fruit trifle pudding.

Some of the guests came visiting us over the weekend. I had to think of something quick and nice to serve as dessert. This lovely fruit trifle was the answer. I had fresh cherries and mangoes. I used them to make the pudding. I also had vanilla ice cream  in my freezer. I decided to use it in place of whipped cream. Various types of creams are not available in all the stores in India, whereas we can order ice cream on phone as well. So I find it convenient to use vanilla ice-cream wherever sweet vanilla flavored cream is required. I had set the pudding in small glasses early in the morning, and allowed it to rest in refrigerator. In the afternoon when I took it out, it was well set, and was the star attraction.

Trifle pudding

All sorts of fruits, especially berries go very well with this pudding. You can use banana, orange, pineapple, apple, and other such fruits. Traditionally sponge cake is used in this pudding, but now people also experiment with biscuits and  rusks. Some sort of syrup or sherry or other wine is used to soak the cake. Here I made crushed cherry syrup and used it in the dish.

  1. Take out vanilla ice cream from freezer and allow it to rest in refrigerator for about 2 hours. For quick result, you can keep it at room temperature, and allow it to soften, but not melt completely.
  2. Next we need to prepare cherry syrup. take half of the pitted cherries and crush them lightly. Heat a pan and add crushed cherries, sugar, and water. Heat on low flame. Cover and cook for about five minutes, stirring occasionally. Remove from heat, and allow the syrup to cool.
  3. Take six glasses. Place cake piece at the bottom of the glass. Press it lightly with a spoon or your fingers. Pour about 1 table spoon of cherry syrup over cake slices. Also add about one table spoon of strawberry crush.
  4. Add a layer of soft ice cream over the crush. Then softly place a layer of cherries and mango slices.
  5. Add a layer of ice cream once again. Sprinkle some slivers of dry fruits, and decorate with cherries.
  6. Keep the glasses in refrigerator for 3 to 4 hours. Serve chilled.
Recipe Notes
Tips:
  • Use softened ice cream. Do not completely melt it.
  • Do not throw away any cherry juice that comes out while pitting. Add it to the syrup.
  • Allow the syrup to cool completely. Do not use hot syrup. You may use any fruit juice to soak the cake slices.
