Date, Walnut Cake Recipe helps you to make delicious and healthy whole wheat cake without using sugar and eggs. This mildly sweet tea loaf gets its sweetness from dates.
Though low in fat, this cake still remains moist due to presence of dates. It also keeps good for a week if stored in an airtight container.
I wanted to make a healthy cake as an accompaniment with my tea. For this reason I decided to use whole wheat flour (atta) in this cake. While trying this recipe, initially I had added jaggery to give sweetness to this cake. I do not like overly sweet cakes; I realized that sweetness provided by dates is enough for this cake. Occasional crunch is provided by walnuts.

Prepare dates and walnuts
Date walnut cake recipe: pit the dates and roast the walnuts
If you are not using pitted dates, first remove stones from the dates. Keep side few dates. Now, to soften up rest of the dates soak them in 1 cup of boiling hot milk. Keep it aside for thirty minutes.
Place the walnuts in an oven tray and bake at 180 degree C (375 F) for 5 minutes or till they turn brown and are roasted. When they cool down, cut them into smaller pieces. Chop the dates that you had taken out and not soaked. Add a teaspoon of wholewheat flour to these chopped dates and walnuts.
Prepare batter for date, walnut cake recipe
Once the dates are soaked, put them along with the milk in a blender. Add melted butter as well, and blend them to get a thick paste.
Take out the date mixture in a large mixing bowl. Sift in flour, baking powder, baking soda, ground nutmeg, and ground cinnamon. Mix everything properly. Add walnuts and chopped dates and mix lightly. The wheat flour that we had added to them forms an air pocket around them and prevents them from sinking to the bottom of the pan.
Pour this batter in a prepared tin and bake for about forty minutes or till done.

This date walnut cake is mildly sweet and moist despite less amount of fat. It is a perfect accompaniment with tea.

- 1 and 1/4 cups dates pitted (250 gm)
- 1/2 cup walnuts (100 gm)
- 1 and 1/4 cup boiling milk
- 1/2 cup butter (salted) (115gm)
- 1 cup and some more whole wheat (atta) flour (250 gm)
- 1/2 teaspoon cinnamon powder
- 1 pinch nutmeg powder
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- Take 1 cup pitted dates in a bowl and pour boiling milk over them. Allow the dates to soak in water for half an hour.
- Place walnuts on a baking tray and bake them for five minutes or till they turn brown. Take them out of the oven and when they are cold cut them into smaller pieces. Cut thin slices of 1/4 cup dates that were not baked in milk. Add a teaspoon of wheat flour and mix so that flour coats these walnut and dates pieces.
- Preheat oven to 180 degree C. Put soaked dates along with the water in a blender. Now add melted butter to it and blend the mixture to a thick paste.
- Pour this mixture in a mixing bowl. Add grounded cinnamon, grounded nutmeg, baking powder, and baking soda to the flour. Sift this dry mixture into the wet mixture. Add chopped walnuts and dates as well. Mix everything well.
- Pour this batter into a prepared baking dish and bake at 180 degree Celsius for 40 minutes or till done. You may check by inserting a clean knife at the centre of the cake. If it comes out clean, then the cake is done.
- Take it out of the oven and allow it to cool down. Cut slices and serve.
