This Bread and Butter Pudding Recipe will help you in making delicious pudding in simple steps.

You can make good use of stale bread in making this traditional British pudding. Layers of bread set with milk and egg custard is simply delicious.

After French toast recipe, this is another recipe that uses bread, and you can use stale bread in the recipe. Unlike smooth cheese cake like consistency of steamed yogurt pudding (bhapa doi) that I make, this pudding has more body.

What kind of bread to use?

You can use any kind of bread – normal sandwich bread, brioche, buns, croissant, or even our very own pav buns. I have used sandwich breads for this recipe, though recipe more or less remains same for any type of bread.

Steps to make bread and butter pudding

Preheat oven to 180 degree C (350 F).

Cut bread slices diagonally, so that you will have triangles of bread. Grease an oven proof dish of 1 liter capacity.

Apply butter on one side of the bread slices. Place slices in baking tray, so that they slightly overlap each other. Spread some raisins (kishmish) over the bread. Also, sprinkle some nutmeg powder and cinnamon powder over this bread layer.

Now, make another layer of bread over the first layer in the same manner. Once again sprinkle nutmeg and cinnamon powder, and place some raisins over this layer as well.

Heat milk in a large bowl. Preferably use full cream milk. In this recipe I have added some cream to the milk for richer taste. It is optional. Remove from flame just before it starts boiling. Keep it aside.

In another bowl lightly whisk the eggs. Add sugar and vanilla essence and mix them properly. First add a tablespoon of hot milk in this egg mixture and mix. Then gradually add rest of the milk, stirring continuously.

Pour this mixture over bread layers. I thought I had taken too much milk and was worried that I will end up with liquidy pudding. But do not fret; the milk gets absorbed and you will get nice and moist pudding in the end. Press the bread gently so that they soak the milk mixture. Place the dish in preheated oven and bake at 180 degree C for 40 minutes or till upper crust is golden brown.

Remove from oven and sprinkle some powdered sugar (optional). Serve warm. You can pour some honey, cream, or custard over the pudding. I like to add some roasted nuts to give some crunch. I like to eat my cinnamon rolls and bread pudding with ice-cream. Cherry pie is another dish that I often pair with ice-cream.

  1. Preheat the oven to 180 degree C (350 F). Apply butter to the baking dish in which you want to bake the pudding.
  2. Cut bread slices diagonally. No need to remove bread crust. Apply butter on one side of the bread slices. Now place a layer of bread slices in the tray such that the slices are slightly overlapping each other (see pic).
  3. Sprinkle some cinnamon powder and some nutmeg shaving on the bread slices. Also, spread some sultanas (kishmish) over the bread layer. Now form one more layer of bread slices and once again sprinkle some nutmeg powder and cinnamon powder. Place the remaining sultanas over this layer.
  4. Add cream to the milk. Heat milk with cream till just before its boiling point. That means remove from heat before it starts to boil. Set it aside. Beat eggs. Now add sugar and vanilla essence. Mix them up properly.
  5. Now add a tablespoon of hot milk to this egg mixture and mix it. Then gradually add remaining milk stirring continuously. Pour this milk and egg mixture over bread layers. Press the bread slices gently so that milk is absorbed by the slices.
  6. Place the baking dish in oven and bake at 180 C for 40 minutes or till a golden crust is formed and the pudding is done.
  7. Serve warm with ice cream, whipped cream, or custard.
Recipe Notes
  • For good flavors use freshly grounded cinnamon powder and freshly grated nutmeg shavings.
  • You can replace sultanas with candied orange peels, or any dried fruits of your choice.
