In this post I will share atta biscuits recipe. Using this recipe you can make healthy whole wheat flour biscuits easily.
I start my day with a cup of hot tea and a nice crispy biscuit with it. Since I wanted to begin my days on a healthy note, so I thought of baking a comparatively healthy biscuit. I finally zeroed in on whole wheat flour (atta flour) cookies. If you stay outside Indian subcontinent, this flour is easily available in any Indian store. The cookies (popularly called biscuits in India) came out very well. Taste of home baked biscuits is awesome. In this atta biscuits recipe I have flavored them with cardamom powder. It gives a nice subtle flavor to these cookies.

I have used salted butter in this recipe. If you use unsalted butter, add a pinch of salt while preparing dough. While making cookies, creaming process of butter is very important. By blending butter with sugar, air is incorporated in the mixture. After that, other ingredients are added to this butter and sugar mixture. Milk should be added gradually. Add as much milk as required. Do not knead the dough. Just mix all ingredients with light hand so that everything comes together. If we knead it too much, the cookies may not be crumbly.
Allow dough to rest for 15-20 minutes. After that roll out dough into a sheet of 3 mm thickness, and cut out cookies of desired shape and size.
Cut cookies of desired shape and bake them.
Bake them in oven at 180 degree celsius for twenty minutes. Check cookies after fifteen minutes as time taken to bake cookies varies from oven to oven. Take them out of the oven when the color of cookies turn pinkish.
Crunchy and tasty cookies are ready
The cookies may be a bit soft initially. Allow them to cool. They will become crunchy on cooling.
You can store these cookies in airtight container for about a month.

Make healthy eggless whole wheat cookies and enjoy with tea or coffee.

- 1 and 1/2 cups whole wheat (atta) flour
- 1/2 cup powdered sugar
- 100 gms salted butter (1/2 cup) softened butter
- 4 tablespoons milk
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon green cardamom powder
- Take softened butter in a mixing bowl. Add sugar powder to it. Beat them together with a wooden spatula or use a blender. Beat them till the color of butter changes to pale yellow and it looks fluffy and light.
- Add atta to it. Mix everything properly. I prefer to use my hands for mixing. The mixture should become crumbly, similar to bread crumbs. Then add baking powder, baking soda, and cardamom powder to the mixture.
- Now add milk gradually, a tablespoon at a time. Mix well. Add only as much milk as required to hold the dough together. Do not knead too much. Mix with light hands, and prepare dough. Cover and let it rest for 20 minutes.
- Preheat the oven to 180 degree celsius. Spread some flour on working board, and roll out a sheet from the dough using a rolling pin. The sheet should be 3 mm (1/8th of an inch) thick. Use a cookie cutter to cut out cookies from the sheet. If you do not have cookie cutter, you can use a lid of any bottle or jar.
- Grease a baking tray or place a baking sheet on a baking tray. Keep cookies on the tray and bake at 180 degree celsius for 20 minutes. Baking time may vary for different ovens. Please check after 15 minutes. Take out the tray from oven when the cookies turn light pink.
- Allow cookies to cool down. If the cookies are a bit soft, they will harden on cooling. If they don't, bake for few more minutes.
- Serve these cookies with tea, coffee, or milk. You can store them in an airtight container for a month.
- Add milk gradually while preparing dough and use as much as required.
- You can flavor these cookies with vanilla essence as well.
