Phalahari potato dahi vada recipe with video of various steps is given in this post.
In India festivals are associated with both feast as well as fast. Fasting has its own benefits, that I had discussed in one of my earlier posts- benefits of fasting: ayurvedic and other concepts. When we fast we either totally stay away from food, or eat only selected items based on customs, belief and convenience. Different region and religion in India follow their own rules and customs as far as fasting is concerned.
It is best to eat fresh fruits and /or light meals during fasting. There are many healthy seeds too that are allowed to be eaten during fast in Hindu religion. Check my post Navratri fast: eat healthy seeds for more details. Potatoes, colocasia (arbi/taro), water chestnut, buckwheat flour and many such items are allowed to be eaten during many fasts. It all varies from family to family.
If we use some imagination it is possible to eat tasty but light food during fasting. There are many ways to cook delicious and at the same time healthy dishes using limited ingredients that are allowed during fasting.

I decided to make dahi vada using potatoes. I used water-chestnut flour as a binding agent. I made vadas by frying mashed potaoes mixed with water-chestnut flour, ginger, green chilies, resin (kishmish), and rock salt (sendha namak). After frying I immersed these vadas in water to make them softer, and at the same time to remove some of the oil absorbed by vadas. Then I served vadas with prepared yogurt on top. I decorated it further with pomegranate seeds, and coriander leaves (cilantro). I also prepare tamarind (imli) chutney the traditional way, and just replace table salt with rock salt/sendha namak. All other ingredients such as jaggery, roasted zeera powder are allowed to be consumed during fasts. I drizzled this chutney over the phalahari potato dahi vada.
